Week 15


Howdy! Here's what's in the basket this week:

-Tomatoes

-Sweet corn

-Farm fresh eggs

-Kale or Swiss Chard

-Cherry tomatoes

 

Cherry Tomato, Basil and Garlic Pasta

Ingredients

-1 Qt cherry tomatoes, halved

-1/2 c olive oil

-2 tbsp garlic, minced

-A dozen large basil leaves

-1/2 tsp red pepper flakes

-1 tsp kosher salt

-1/2 tsp black pepper

-1 lb dried angel hair pasta

-1 1/2 c parmesan cheese

Directions

-Combine cherry tomatoes olive oil, garlic, basil, salt and both peppers in a large bowl. Cover with plastic wrap and set aside for about 4 hours.

-Bring a large pot of water with 2 tbsp salt to a boil. Add pasta and cook al dente. Drain pasta well and add to the bowl with the cherry tomatoes. Add parm and some extra fresh basil leaves and toss well.
