CSA Week 10

Howdy, y'all! I can't believe we're already halfway through the season. Time flies when you're having fun I reckon! Here's what's in your baskets this week:


-Tomatoes:

-Red, pink, purple, orange slicers

-Roma

-Assorted cherries

Peppers:

-Green and purple bells

-Jalapeno, Poblano, Thai sweet, sweet snax

-Sweet Corn

-Watermelon- Sugar baby or Charleston gray

-Onion

-Cabbage



 

Tomato Pie


Ingredients:

-4-5 tomatoes , peeled and sliced

-10 fresh basil leaves , chopped

-1/2 cup green onion (or red onion), chopped

-1 pre-baked pie crust

-1 cup shredded mozzarella cheese

-1 cup freshly shredded cheddar cheese

-3/4 cup mayo (or half mayo, half Greek yogurt)

-2 Tbsp grated parmesan cheese

-Salt and pepper to taste


Directions:

  • Preheat oven to 350.

  • Place the tomatoes in a colander in the sink in a single layer. Sprinkle with salt and allow them to rest for 10 minutes.

  • Use a paper towel to pat-dry the tomatoes and make sure most of the excess juice is out.

  • Layer the tomato slices, basil, and onion in pre-baked pie shell. Season with salt and pepper.

  • Combine the grated cheeses and mayo or Greek yogurt together.

  • Spread mixture on top of the tomatoes and sprinkle parmesan on top.

  • Bake for 30 minutes or until lightly browned. Allow to rest for at least 15 minutes before cutting and serving.

 

If you're looking for something to do this Saturday, the annual Henry County Harvest Showcase is at the Henry County Fairgrounds from 9am-3pm. I'll have my booth with barn quilts, barn quilt jewelry, herbal bath products, herbal candles, herb plants and houseplants, and more! There's so much to do- farmer's market and local artisan booths, great local food and homemade ice cream, and tons of entertainment! There's an antique tractor pull in the afternoon if that's your thing, but there's also live music, a petting zoo, and games for the kiddos put on by the Henry County FFA. It's really a great time, and it's my favorite community event of the year!
