CSA Week 12

Happy rainy Thursday, Misfit Members! Here's what's ripe this week:


-Tomatoes: Slicer, Roma, Cherry

-Peppers: Bell, Chili, Banana, Jalapeno, Anaheim Chili, Ancho-Poblano, Habanero

-Potatoes: Yukon Gold, Red Pontiac

-Watermelon

-Cabbage

-Sweet Corn

-Green Beans

-Squash: Yellow, Patty Pan, Zucchino

-Okra

-Eggplant


 

Tomato & Squash Casserole


Ingredients:

-1.5 cups shredded mozzarella cheese

-1/2 cup shredded Parmesan cheese

-2 Tsp garlic powder

-1 teaspoon basil

-1 teaspoon oregano

-2 summer squash sliced thin

-4-5 tomatoes sliced

-2 tablespoons butter melted

-3/4 cup fine bread crumbs

-Salt and pepper to taste


Directions:

-Preheat oven to 375 and grease a 9x9 baking dish with nonstick cooking spray. Set aside.

-In a small bowl, add cheese and spices. Mix well. Season with salt and pepper. Set aside.

-Place zucchini in a single layer in the bottom of the prepared pan. Sprinkle with 1/4 of the cheese. Top with tomatoes, in a single layer and 1/4 of the cheese mixture. Repeat layers.

-Add melted butter and bread crumbs together and mix well. Sprinkle on top of baking dish.

-Cover with foil and bake for 25 minutes.

-Remove foil and bake for an additional 20 minutes or until vegetables are tender and top is crusty.

-Let casserole stand 5 minutes before cutting into slices and serving.


 

It must have gotten too hot last week for the popcorn, because as I was harvesting the ears this week, I noticed a couple of kernels popped! It's almost dried out enough to pop well, but I want to give it another week or two before I send it out in the baskets. I went ahead and grabbed it out of the field to save it from the rain that came in last night, but it could have used another week or two to dry.


We are starting to enter another transition period, where we are starting to see the early summer crops dwindling and fall crops starting to come on. The sweet potato vines are still going strong, so I will probably give most of them another week or two before I start pulling them. The second round of green beans are flowering, so they will be producing in the following week or two. The fall greens have been pretty sow to come on, which isn't surprising, given the high temperatures.
