CSA Week 14

Happy Thursday, Misfit Members! It's hotter than a Jalapeno's armpit out here!! Here's what's ripe this week:


-Tomatoes: Slicer, Roma, Cherry

-Peppers: Bell, Banana, Jalapeno, Habanero, Chili

-Green Beans

-Yardlong Beans

-Potatoes: Kennebec, Yukon Gold

-Squash: Zucchino, Patty Pan

-Sweet Corn




 

Tomato & Zucchini Pasta


Ingredients:

-2 medium or 1 large zucchini

-2 cups cherry & roma tomatoes

-8 oz pasta (I like rotini)

-2 tbsp olive oil

-1 tsp garlic powder

-1 tsp black pepper

-1 tsp fennel seeds

-1/4 cup vegetable stock

-1/2 teaspoon Cayenne pepper, optional

-1 cup grated parm


Directions:

-Cook pasta al dente in a pot of boiling water.

-Add 2 tbsp olive oil to a large skillet on medium heat. Sauté the diced zucchini until golden on the edges, stirring frequently. Remove the zucchini and set aside.

-Still in the same skillet, add the cherry tomatoes, black pepper, fennel seeds, garlic powder, Cayenne pepper (if using), vegetable stock, and cover with a lid. Cook the tomatoes until they are blistered, stirring frequently.

-Push the tomatoes on the side of the pan and add cooked zucchini, cooked pasta, and parmesan. Give a good stir and reheat for a couple of minutes, adding a little vegetable stock if necessary.

5. Serve the tomato zucchini pasta immediately with a drizzle of olive oil and more parmesan if you like.


 

Y'all, it's so hot this week, it even has the calves coming early. The ladies said "it's too hot, y'all get outa here!"


I've been doing my best to keep the plants hydrated and keep the animals from overheating, but it's been a struggle when the heat index is over 100 for a week straight. I really hope we get a bit of rain today, because the plants are starting to protest, especially the tomatoes and bell peppers. I had a crop of lettuce ready to go in the ground for fall but I don't think they will even go in before next week. If nothing else, I'll start some leaf lettuce under shade cloth to make sure we will have some greens before the season's over!
