CSA Week 17

Well, Misfits, it's finally feeling a little like fall this morning! I doubt it will last, but we might as well enjoy it! Here's what's ripe this week:


-Tomatoes

-Peppers: Bell, Banana, Chili, Jalapeno, Habanero

-Squash

-Sweet corn

-Popcorn

-Potatoes: Yellow & Red

-Sweet Potatoes

-Yardlong beans



 

Roasted Sweet Potato Tacos


Ingredients:

-2 lbs. sweet potatoes, cut into 1” cubes

-4 Tbsp olive oil, divided

-1 tsp each: cumin, paprika, garlic powder, onion powder

-¼ tsp ground coriander

-Salt & pepper to taste

-1 ½ cups green pepper, chopped

-1 cup red pepper, chopped

-1 can black beans (rinsed and drained)

-½ cup sweet corn

-Flour tortillas


Sauce:

-3 Tbsp honey

-3 Tbsp lime juice

-3 Tbsp fresh cilantro chopped


Directions:

-Preheat oven to 425. Grease a large baking sheet.

-Add sweet potatoes to a large bowl and add half the olive oil. Shake or stir to coat. Mi spices in a small bowl, then sprinkle onto the potatoes. Shake again to coat.

-Bake for about 20 minutes, or until starting to brown.

-Using the same bowl, add the peppers. Add 1 tbsp olive oil and salt & pepper. Shake to coat.

-After the first 20 minutes, remove the pan from the oven. Add the peppers and return to the oven. Bake for about 20 more minutes.

-Mix honey, lime juice and cilantro together in a small bowl and stir to combine.

-Once sweet potatoes and peppers are looking nice and roasted, add corn and black beans and stir to combine.

-Drizzle sauce over all the veggies on the pan and stir until everything is evenly mixed.

-Return to the oven for 10-15 minutes, or until corn is slightly browned.

-Remove from oven and serve immediately in tortillas or over salad greens, topped with your favorite taco toppings (salsa, guac, etc).


 

This week's bog post is fairly short, because next week's will be super long. We're going to get into what went right this season, what went wrong, and what we're doing differently next year to mitigate the failures and improve on the CSA. This year threw a whole bunch of curveballs at us, and with the weather getting increasingly hot and unpredictable, I have some things in the works that will offer some solutions. I'm excited to share what's coming next season with all of you!
