CSA Week 2

Hello all! Happy first delivery of the year for our Bi-weekly folks! Here's what you may find in your baskets this week:


-Kale- Curly, Toscano, Red Russian

-Lettuce: Romaine, Loose Leaf Red

-Salad Greens Mix

-Baby Squash

-Baby Cabbage

-Herbs: Dill, Cilantro, Parsley, Basil, Purple Basil

-Arugula

-Collard Greens


 

Garlic Roasted Baby Squash


Ingredients:

-1 Qt baby squash

-4 Tbsp olive oil

-2 cloves of garlic, minced

-1-2 Tsp oregano

-Salt & pepper to taste


Directions:

-Preheat oven to 350. Line a sheet pan with parchment paper.

-Wash your squash and pat dry. Remove the ends of each one and slice long-ways down the middle.

-Toss with oil, garlic and seasonings.

-Spread evenly on the sheet pan and bake for 15-20 minutes or until fork tender.


 

My favorite time of the year is upon us: Tiny frog season!! Just look at that little guy- no bigger than the tip of your finger! I honestly forgot to take any pics this week other than this one right here. Since everyone has a little something different in their baskets each week, I don't have my usual "default" basket to take a picture of. This new structure is taking a little getting used to!






Since I'm a no-count forgetter who didn't take any pics, enjoy this photo of my spunky baby girl Beulah. That's her mama, Bella, to the right. Look at her head, y'all. When I saw this baby had a perfect heart on her head I almost died on the spot!
