CSA Week 4

Okay guys I promise this is the last week of just greens and radishes! (I may have over-planted a bit with the spring crops, whoops!) Without further adieu, this week we have a rainbow of lettuce varieties and, of course, some other goodies:

  • 1 head green butterhead lettuce

  • 1 head red cross butter lettuce

  • 1 head mini red lettuce

  • Broccolini

  • Radishes

  • Kale

  • Mini cauliflower head OR baby squash



Periodic reminder to wash your produce! Most produce is rinsed in an ice bath before it gets packed, but that doesn't mean it's ready to eat. Actually, always wash your produce even if it comes from the grocery store, just in case!

 

Garlic Rice with Kale


Ingredients:

-5-7 cups sliced kale leaves

-2 tsp olive oil

-Salt & pepper

-2 tbsp unsalted butter

-3-4 garlic cloves, minced

-1 1/2 cups uncooked white rice

-2 cups chicken broth


Directions:

-Add kale to a large bowl. Drizzle with olive oil and sprinkle with salt & pepper. Massage the oil into the kale for 30 seconds or so by "scrunching" the kale with your hands. Set aside.

-Melt butter in a large pot over medium-high heat. Add garlic and saute until fragrant, about 1 minute.

-Add rice and stir.

-Add broth and stir. Cover and turn heat down to medium-low to simmer. Cook for about 15 minutes until the liquid is absorbed.

-Add the kale on top of the rice, put the lid back on and remove from heat.

-Rest for 10-15 minutes, then fluff with a fork, stirring the kale through the rice.

-Stir through extra butter and season with salt & pepper to taste.


 

Farm news for the week:


We were finally able to get the first planting of sweet corn in the ground this week, yay! I don't know about you guys, but sweet corn is one of my favorite things about summer.


We were also able to get the final patch of black plastic mulch down this week, so I was able to get the rest of the tomatoes in the ground. A couple days after that, though, the wind decided to let me know the mulch layer didn't bury it deep enough on one side. I didn't let the wind get away with it though, I quickly reburied it by hand and made sure it stayed put!

For those of you who just joined us for the first time this season, this the method that I use to grow most of the veggies. There is drip tape irrigation buried under the plastic, which is very efficient and delivers water directly to the roots. This method makes it possible for me to operate without any help (besides my husband, who helps out when I have 2-person jobs or he has time away from his farm endeavors).



A couple of you have asked about Odin and his ACL recovery. He is doing great, putting full weight on that leg now. He is still penned up for at least another few weeks, which he isn't super happy about, but he is getting plenty of extra loves for being such a good boy! He's still watching the chickens, just from the pen next door. Luna has to do all the raccoon and opossum chasing for a while!
