CSA Week 5

Howdy, Misfit Members! Happy Thursday! Here's what's ripe for the pickin' this week:


-Green Tomatoes

-Kale: Curly, Toscano

-Cabbage

-Red Onions

-Broccoli

-Snap Peas

-Salas Mix

-Squash: Patty Pan, Yellow Crookneck, Zucchini, Zucchino

-Cucumbers


It's definitely a squash week! I might have ignored my zucchini plants a few days over the weekend, and mayyy have had an entire gator-bed full of baseball-bat size zukes. Whoops!! Oh well, at least the chickens enjoyed them!


 

Baked Zucchini Bites


Ingredients:

-1 Cup zucchini, shredded and drained

-1 Clove garlic, minced

-1/3 Cup breadcrumbs

-1/4 Cup Parm

-1 Egg

-3-4 Tbsp Italian seasoning

-Salt & pepper to taste

-Marinara for dipping


Directions:

-Preheat oven to 400. Spray a baking sheet with non-stick spray and set aside.

-Use the largest side of a box grater to grate zucchini. Roll up in a towel to wring out moisture.

-Add all ingredients (except marinara) to a bowl and mix well to combine.

-Scoop out about a tablespoon of the mixture and pat into a ball. Place the balls on the baking sheet and bake for 15-20 minutes, or until golden. Serve with marinara.


 

The first and second planting of the sweet corn are really growing! The third planting has sprouted, and is just a couple inches tall.


Up the hill in the plastic rows, it seems something is making a snack of our popcorn. I tied some noise-making ribbon on every other stalk, so hopefully that puts an end to it!


And y'all, I am up to my ears in green tomatoes. I am very impatiently waiting on the darn things to turn red- surely to goodness we will have some by next week!
